Black Turtle Beans are common black beans so popular in Latin American and Carribean cuisine. They are dried and have a very long shelf life and are a great addition to any food storage program. They are excellent in beans & rice, bean soups, bean salads & more. They are an great source of protein and have a meaty texture and are very popular with vegans and vegetarians.

When sprouted they make a beautiful dark purple sprout. Germination rates on black beans tend to be lower that other types of seeds, often about 50%. Black beans are usually tough to digest unless cooked, and this also goes for black bean sprouts.

To sprout soak overnight. Black beans absorb more water than most other seed types, so use extra water in soaking. Transfer to your sprouter and rinse two to three times a day for one or two days. Black bean sprouts should be cooked and are best when the sprouts are very young. Over sprouting black beans results in an unpleasant taste. Young sprouts (quarter inch or less) make an great addition to any bean soup.
